- 1 large fennel bulb, trimmed and thinly sliced
- 75g of mixed lettuce leaves
- 3 large oranges, peeled and segmented
- 2 tablespoons of white wine vinegar
- 2 tablespoons of orange juice
- 3 tablespoons of extra virgin olive oil
- Place vinegar, orange juice and olive oil in a jar. Season with salt and pepper, secure lid and shake until combined.
- Place sliced fennel, lettuce and oranges in a bowl. Add dressing and toss to combine.
