Fennel and Orange Salad

  • 1 large fennel bulb, trimmed and thinly sliced
  • 75g of mixed lettuce leaves
  • 3 large oranges, peeled and segmented


  • 2 tablespoons of white wine vinegar
  • 2 tablespoons of orange juice
  • 3 tablespoons of extra virgin olive oil


  • Place vinegar, orange juice and olive oil in a jar. Season with salt and pepper, secure lid and shake until combined.
  • Place sliced fennel, lettuce and oranges in a bowl. Add dressing and toss to combine.
