Looking for A New Way to Eat Cherries? Try This Cherry & Watermelon Salad!

Ingredients

  • 1 small seedless watermelon
  • 1kg of pitted and halved cherries
  • 1 vanilla bean
  • 3 tablespoons of maple syrup
  • 3 cloves
  • Juice of 1 and ½ lemons
  • 100g of pistachio nuts

Method

 

  • Cut watermelon into wedges and remove flesh from the skin. Cut each wedge into 1cm triangular slices.
  • Place watermelon slices with cherries
  • Split vanilla bean in half and scrape seeds into a saucepan.
  • Add scraped bean, maple syrup, cloves and 400mL of water. Stir and bring to boil.
  • Simmer for 5 minutes and then pour mixture of the bowl of fruit.
  • Add lemon juice and pistachios and toss until well combined.
  • Refrigerate until chilled
