Ingredients:

1kg ripe tomatoes, coarsely chopped

1/3 cup sugar

2 tablespoons freshly squeezed lime juice

1 tablespoon fresh grated or minced ginger

1 teaspoon ground cumin

¼ teaspoon ground cinnamon

1/8 teaspoon ground cloves

1 teaspoon salt

1 yellow capsicum, coarsely chopped

½ red onion, coarsely chopped

 

Method:

  1. Combine all ingredients in a heavy medium saucepan. Bring to boil over medium heat, stirring often.
  2. Reduce heat and simmer, stirring occasionally until mixture has a consistency of thick jam (approx. 1hr 15min). Taste and adjust seasoning. If you would prefer a smoother texture, this mix can be blended in a food processor, once cooled.
  3. Cool and refrigerate. Ready to use.

Serving suggestions:

Add to cracker with some goats cheese for a delicious snack or entrée.

Use as a sauce at your next summer BBQ.
